Description
The Moreau family owns six parcels in the historic Vaillon vineyard, covering a total area of 4.7 hectares; all have a south/south-easterly exposure, and the vine density is 6,500 vines per hectare. The soil here is Kimmeridgian limestone—mixed with clay and marl—and is rich in marine fossils, particularly those of the small oyster species known as *Exogyra virgula*.
The Premier Cru Vaillon is produced from five parcels, with vine ages ranging from 38 to 75 years. Organic farming methods have been employed since 2013.
Harvesting is done exclusively by hand, and the grape clusters are sorted on a selection table. Following selection, a pneumatic press is used, and fermentation takes place at 20°C using natural yeasts. The wine is aged for eight months: 55% in stainless steel tanks and 45% in oak barrels. The barrels are 2, 3, and 4 years old, with only 5% being new oak. It is important to note that the interest of these Chablis wines does not derive from new oak aromas or toast levels; the barrels are used solely to highlight the characteristics imparted by the soil and the grapes. After blending, the wine undergoes further aging in steel tanks.
The wine undergoes 100% malolactic fermentation and natural tartaric acid stabilization following the 12–16 month aging period.
