Pale straw yellow colour with slow, persistent bubbles. Characterised by ripe fruit aromas, mostly apple and pear. Restrained but lingering flavours finish with pleasant acidity on the finish. 18 months on the lees. Recommended food pairing: cold cuts, grilled fish, fish in sauce (creamy or tomato), seafood, hot and cold salads, duck and chicken. Grape varieties: Macabeu, Xarello and Parellada
