Description
A wine from the Navarre estate of the Bodegas Escudero winery. It is sourced from vines averaging 40 years of age, which grow in very lean, limestone-rich soil, resulting in very low yields. Fermentation takes place in stainless steel tanks at a temperature of around 28°C, with skin maceration lasting for more than 30 days. Subsequently, the wine spends 12 months in first- and second-fill French oak barrels.
It has a deep, dense, chestnut-brown color. The nose reveals forest fruits and aromas of grape skins—a result of the extended maceration—complemented by subtle notes of vanilla from the oak. On the palate, it displays spicy nuances alongside hints of raisins and forest fruits. It is a highly complex and elegant wine: powerful, yet approachable.
Food pairing: mature and semi-mature cheeses, red meats, game, meat-based stews and legume-based dishes, as well as various hams and sausages.
