Description
Cabernet Franc, which has a really special aroma, is harvested by machine from 20-year-old vines on the limestone-blue flint soil of the estate located next to Montreuil-Bellay. Due to the AOC status of the area, the yield per hectare is kept below 50 hl. Without pressing, the grape juice is extracted by crushing the berries, which gives it its fantastic dark ruby color, and with this method, the presence of tannin can be reduced to a minimum. Fermentation takes place at a controlled temperature of 15°C, with the addition of yeast, and then malolactic fermentation takes place during maturation. Champagne made exclusively from Cabernet Franc is a true rarity with its dark ruby color. Its aroma, which is dominated by aromas of red fruits such as strawberry and currant, is made spicy by a hint of cocoa, and when tasting, we are enchanted by the sip, which acquires its full maturity during 12 months of bottle aging.
