Description
The Chenin Blanc and Chardonnay, grown on the clayey glauconitic and chalky soils of the winery's Le Puy Notre Dame and Les Caves estates, were harvested mechanically from vines that were on average 25 years old. After selection, the grapes were pneumatically pressed and fermented at 15°C with the addition of yeast. During maturation, the wine was kept on the lees until two weeks before bottling, at which time it had a natural sugar content of 21 g/l. After blending (90% Chenin Blanc, 10% Chardonnay), it was bottled on 05.04.2017 and aged for more than 2 years. Its color is a charming straw yellow, its aroma is extremely complex, with aromas of caramelized peach, almond and acacia honey forming a fantastic blend. In the sip, the aromas of milk caramel and brioche emerge, and the finish is completed by the almonds that are already visible in the aroma.
