Description
MARIASY Aszú is rich and elegant, displaying an excellent balance between acidity and sugar. This is due to the loess soil of the Máriás vineyard in Tokaj, the unique microclimate, and the long-standing, distinctive culture of Tokaj Aszú winemaking.
To produce MARIASY noble Aszú wine, we add 5 *puttonyos* of Aszú berries—amounting to 125 kilograms of hand-selected, individual berries—to one *Gönc* barrel (136 liters) of high-quality, fermenting must made from Furmint and Yellow Muscat grapes. The mixture of must and Aszú berries macerates during the cool autumn nights; the berries absorb the must, swelling and softening until they are ready for pressing. The honey-sweet, nectar-like Aszú must ferments in wooden barrels—a slow, patient process that often extends until Christmas. In the harsh, freezing cold of January, the young Aszú wine is still cloudy and yellowish-brown, but as barrel aging continues over the following months, it transforms into a clearer wine with increasingly refined aromas. Cultivating the vines was truly worth it!
The Aszú wines are aged in 136-liter *Gönc* wooden barrels for 18 to 24 months. Our barrels are a testament to the oak from the Zemplén Mountains bordering the wine region and the craftsmanship of local coopers. After bottling, our Aszú wines mature in the bottle for years, giving them the opportunity to embark on a decades-long journey of Aszú evolution.
