This wine is always vintage and only 12 vintages have been released so far: 1990, 1993, 1995, 1997, 1999, 2000, 2001, 2002, 2005, 2006, 2012, 2013. This is the 13th vintage, AYALA Perle 2015. This exceptional cuvée, bottled in very limited quantities, is 80% chardonnay and 20% pinot noir. AYALA Perle is made from a blend of the house's style founding crus, from a single vintage. With Grands Crus exclusively sourced from the Côte des Blancs and Montagne de Reims, each bottle is unique – just like the wines that make up the blend, which have been selected for their outstanding ageing potential: Aÿ, Chouilly, Cramant, Le Mesnil-sur-Oger and Oger have been carefully selected for this 2015 vintage. Ageing for 8 years on lees, under cork + 1 year in bottle, 5g/l dosage
