As the name suggests, this is a pure expression of the Xarel-lo variety—crafted with minimal intervention and absolutely no added sulfur—to highlight the true essence of the grape. It is aged on the lees for 24–30 months. On the nose, it offers a playful blend of intense white fruits and nuts. It is robust yet fresh, characterized by mineral notes and delicate, subtly spicy nuances. There is a surprisingly elegant harmony and balance between power, creaminess, and complexity. No sulfur was used at any stage of the sparkling wine’s production!
