Feldolgozásnál a finom préselésnek köszönhetően, tiszta lényeredéket kapnak, így nincs szükség szűrésre. Hozzáadott élesztő nélkül spontán erjednek a borok. Az erjedés befejeztével a bor a tartályokból, gravitációs áramlással jut el a fahordókba.
