Description
After a late August harvest and quick processing, the mash is immediately transferred to refrigerated tanks to preserve the most flavor during fermentation. After 18 days of fermentation and malic acid breakdown, it is aged in small barrels for 3 months, then bottled for 6 months. A rich, full-bodied, Mediterranean red wine.
