Description
The healthy overripe grapes were immediately pressed after de-stemming and crushing. Fermentation was preceded by a 24-hour must settling period. The batch fermented in tanks. After the first pressing, the wine matured on fine lees for 5 months without agitation. The entire batch matured for 14 months in used 225-liter barrels.
