Description
Giró Ribot is a family-owned winery located in Spain's Penedès region, with deep roots in both Penedès and the French Champagne wine regions. For generations, the winery has remained committed to preserving quality and authenticity.
Giró Ribot owns 100 hectares of vineyards, cultivating grape varieties such as Chardonnay, Muscat, Macabeo, Parellada, and Xarel·lo. The favourable climate and soil conditions of the Penedès region—characterised by clay-limestone soils, moderate rainfall, and the protective influence of the Montserrat mountain range—provide an ideal environment for viticulture.
The winery is dedicated to traditional vineyard practices, including hand harvesting and dry farming without irrigation, while embracing modern cellar technology, such as gyropalettes for riddling. This combination results in wines with a refined mousse, pronounced minerality, and the complex, layered aromas that define its Cavas.
The Giró Ribot "Ab Origene" Brut Nature Cava Reserva is classified in the premium Guarda Superior category under the new Cava regulations.
The grapes are harvested by hand between mid-August and the end of September from vineyards that are 20–30 years old. During the production of the base wines, the grapes are destemmed and undergo cryomaceration to extract the primary varietal aromas. Fermentation takes place in stainless steel tanks at low temperatures of 12–14°C to preserve and maximise the development of secondary aromas. The blended base wine then undergoes a second fermentation in the bottle according to the traditional Champagne method. Bottle ageing lasts between 24 and 36 months.

Pale straw yellow in colour with brilliant golden highlights and delicate green reflections. The mousse is fine and creamy. The bouquet is elegant, revealing notes of toasted almonds complemented by subtle hints of wildflower honey and dried Mediterranean herbs.
On the palate, it is bone dry, well-structured, and vibrant, displaying pronounced toasted nuances alongside dried fruit flavours. The finish is elegant, persistent, and remarkably long.
