Description
Practically only in Asti in Piedmont is the technology used to make this wine used. The essence is that completely healthy Muscat grapes are harvested at technological maturity (primarily for acidity, i.e. the acidity is considered the decisive factor), then after rapid and preferably low-temperature processing, fermentation is stopped by drastic cooling at 5% alcohol content, treated under pressure until ready and quickly bottled. This way, the natural sugar content of the grapes is retained in the drink, along with the significant carbon dioxide from fermentation. The end result is an explosively fruity, fragrant, rich, Muscat-like, sweet sparkling wine with harmonious acids, in which the bubbles and alcohol content are much milder than in a prosecco or even other sparkling wine.
