Description
Certified organic estate since 1974. It is the result of a very special local winemaking technology that has been used since Roman times, called "appassimento". The grapes are naturally dried for 3-4 months in the drying equipment (fruttaio). During drying, the grapes lose water and lose 40-50% of their original weight, as a result of which they become concentrated. After that, slow fermentation takes place and aging continues in French oak barrels for 42-50 months, depending on the vintage! The wine then rests in the bottle for one year before being put on the market.
