Description
The Moreau family has six plots in the historic Vaillon estate, covering a total of 4.7 hectares, all facing south-southeast, with a density of 6,500 vines per hectare. The soil here is also Kimmeridge limestone with clay and marl, which is very rich in marine fossils, especially the fossils of the small oyster species Exogyra Virgula.
The Premier Cru Vaillon is made from five plots, with an average age of 38 and 75 years. They have been organically cultivated since 2013.
The harvest is done only by hand and the bunches are selected on a sorting table. After selection, a pneumatic press is used and fermentation is carried out at 20° C with natural yeasts. The wines are aged for 8 months in 55% stainless steel tanks and 45% in oak barrels. The oak barrels are 2-3-4 years old and only 5% of them are new oak barrels. It is important to mention here that the Chablis will not be interesting due to the aromas of the new barrels and the degree of roasting, they are only used to highlight the foundations given by the soil and the grapes. After marriage, it is further matured in steel tanks.
