Cavalleri: Franciacorta Blanc de Blancs Brut Nature DOCG

Founded in Erbusco in 1979, Cavalleri winery has developed with dedication and commitment the project outlined by its founder: to make wines with the utmost respect for the territory and nature, to highlight the unique characteristics of the soil and to follow a sustainable and pragmatic agricultural model. Their 43 hectares of vineyards produce 200,000 bottles per year. The Cavalleri family makes the wines themselves and their vision of excellence begins with the land. For them, the vineyard is the greatest asset, the fundamental starting point for creating quality wines. After years of study, research and observation, the family decided to embark on the path of biodynamic agriculture: the result is wines that stand out from the crowd for their purity, character and elegance. In the cellar and on the vineyard, the utmost attention is paid to detail and quality, with minimal human intervention

This cuvée has managed to condense the fresh, mineral character of the 2019 vintage. "The biodynamic approach is the ideal way to achieve our goal: to make wines that express the deepest identity of the territory." Their wines are made exclusively from Chardonnay grapes from hillside vineyards.

The base wines are made with wild yeasts, spontaneously fermented, partly in steel tanks and partly in barrels. Malolactic fermentation takes place in 20% of the cuvées.

Composition: 100% Chardonnay, of which 90% comes from the 2019 harvest and 10% from the 2018 reserve wines; fermentation in steel (80%) and large oak barrels (20%). 24 months of fine-mesh maturation, 0 sugar, brut nature category.
