Variety: 100% Viura.
Region: The grapes come from the vineyards of Grávalos, south of Monte Yerga, at the foot of the Cordillera Ibérica, at an altitude of 700–800 metres above sea level. This is a strikingly high-lying area where fresh wines with low alcohol and very fine, elegant aromas can be produced.
Vinification: Pressing is extremely gentle, and only the free-run juice is used for sparkling wine production. The must is fermented in stainless-steel tanks at 14°C. The second fermentation takes place in the bottle, where the sparkling wine spends at least 36 months on the lees.
Tasting: Lemon-yellow in colour with fine, tiny, dense bubbles. Fruity aromas dominate, mainly apple and white peach. On the palate, light acidity and well-integrated bubbles pamper the taster.
