Blanc de Blancs is a mineral sparkling wine, whose chalky feel is achieved by the addition of a modest amount of reserve wine (maximum 10%).
This special taste experience is the essence of our vineyard and the Chardonnays grown in pure chalk soil. Yes, the wines can be a bit strict when young, which is why the aging on the lees - much longer than the fifteen months required by law - is extended to four to five years before disgorging.
