Description
A small valley between the two other grands crus (Les Clos and Vaudesir), Valmur is clearly a terroir with mainly clayey soil.
The two Moreau family plots total 1 ha, 70% facing south-east and the other 30% facing north-east. Plant density: 7000 vines/hectare.
The vines, which are on average 60 years old, have been cultivated organically since 2013. Harvesting is done only by hand and the bunches are selected on a sorting table. Then a pneumatic press is used and fermentation is carried out at 20°C with natural yeasts. The wines are aged in 40% stainless steel tanks and 60% oak barrels for 9 months. The oak barrels are 2-3-4 years old and only 5% are new oak barrels. It is important to mention here that Chablis will not be interesting due to the aromas of new wooden barrels and the degree of roasting, these are only used to highlight the foundations given by the soil and the grapes.
After blending, another 6 months of maturation follows, this time exclusively in steel tanks. Natural tartaric acid stabilization after 12-16 months of maturation. 100% malic acid decomposed.
