Bresolin Benny Asolo Prosecco Superiore Extra Brut DOCG Bio

Benny Extra Brut is a flagship Prosecco from the Bresolin Bio winery, hailing from the Asolo hills in Italy—specifically the prestigious Asolo Prosecco Superiore DOCG production area. The wine is crafted from 100% Glera grapes, the traditional and sole mandatory primary variety for Prosecco.

Appearance and Aroma:
It displays a pale straw-yellow color with an exceptionally fine, persistent perlage. The nose reveals notes of peach blossom, wild rose, and passion fruit, complemented by aromas of apple, grapefruit, and pineapple.

Flavor Profile:
A dry, tautly structured, yet harmonious Prosecco. True to the Extra Brut category, it is produced with very low residual sugar (4 g/l), allowing freshness, citrus notes, and a mineral-saline character to take center stage alongside the fruitiness. It boasts a long, clean finish that is both elegant and energetic.

Production Method:
The grapes undergo gentle pressing; following static settling, the must is fermented at 17–19°C using selected yeasts. The base wine rests on fine lees in stainless steel tanks for three months. The secondary fermentation—which creates the bubbles—is carried out using the traditional Martinotti-Charmat (Italian) method in pressure-resistant steel autoclaves. Prior to bottling, the yeast cells are separated from the wine via microfiltration. Food Pairing:
An excellent aperitif, it also pairs beautifully with fish appetizers, seafood dishes, light pasta dishes, white meats, and premium cold cuts.

About the Winery:
Bresolin Bio is a family-run organic estate located in the hills of Asolo, in the Veneto region. The winery was founded in 2012 by three Bresolin brothers: Enrico, Matteo, and Davide. Their philosophy centers on sustainable viticulture, the preservation of biodiversity, and a faithful expression of the terroir. The vineyards are surrounded by forests, olive trees, and orchards, and the estate operates under organic certification. The family oversees every step of the process, from the vineyard to the bottle.
