Description
The grapes are processed whole bunches to extract deeper color and improve structure and complexity. Chanson’s primary goal is to maximize fresh fruit flavors, so the grapes are immediately chilled upon arrival in a custom-designed cooling tunnel that provides rapid cooling without oxygen. Champagne-style fractional pressing is then used to extract the color juice. For white wines, up to 20% oak is used.
Chanson Bourgogne Blanc is pale gold in color, with intense aromas of citrus, white petal flowers and green almonds, complemented by mineral notes. The palate is balanced, with clean fruit and precise acidity, supporting a refreshing finish.
The grapes are harvested from the clay and limestone slopes of the Cote Chalonnaise and Cote de Beaune.
