He has been involved in viticulture since 1991, returning to the traditional ways and means of grape processing and winemaking. He also ferments white varieties on their skins, ages his wines in oak yet avoids the use of new oak. The winery still has plenty of reserves, mainly in the areas of viticulture and bottling.
