Description
Variety: 100% Pinot Noir. Area: The raw material comes from the settlement of Grávalos (La Rioja), south of the Yerga mountain, at an altitude of 800 meters above sea level. At this altitude, it is possible to harvest with low potential alcohol content and good acidity, resulting in a cava with a very fresh, delicate and elegant aroma. Processing: Hand-harvested and gentle pressing, only the lees are used to make sparkling wine. The first fermentation of the must takes place in stainless steel at a low temperature of around 14°C. The second fermentation takes place in the bottle, where it is then aged for at least 24 months before disgorging. Tasting notes: Salmon color, rich, delicate, small-bubble foam. The smell is attractive, sufficiently but not excessively aromatic. The sip is surprisingly wide, well-structured, and the taste is mainly dominated by currant and strawberry notes. The foam is pleasantly rich, not intrusive and elegant.
