Description
Organically grown chardonnay (55%) and pinot noir (45%) make up the champagne. The raw material is harvested by hand and fermented separately for each variety. In the spring following the harvest, they are blended, then the wines are fermented again, and then. This is followed by a minimum of 24 months of bottle aging and disgorging. In the glass, the drink is salmon pink, with a delicate and persistent pearlescence. In terms of its aromatics, it is very elegant, the balance is almost palpable. Everything is in place and nothing is in the way. It can be used excellently in gastronomy, it can be perfectly paired with salamis, spicy meats, aged cheeses and, of course, fish and crabs.
