Description
After hand-picking on October 5, the mash fermented spontaneously for 6 weeks in an open wooden container. In the beginning, they immersed the pomace by hand, later they switched to pumping. The wine was left to mature for 16 months in small Hungarian and French oak barrels, in a traditional underground cellar. It was bottled unadorned and unfiltered.
