Description
After harvesting at the end of August and rapid processing, the mash is immediately transferred to chilled containers to preserve most of the flavor during fermentation. After 18 days of fermentation and malic acid decomposition, it is aged for 3 months in small barrels, after which it is bottled, where it rests for 6 months. Rich, full-bodied Mediterranean red wine.
