Description
In the grapes, we apply yield restriction in order to get the best possible fruit, harvesting in a very ripe state (withered). We pick them by hand in 15 kg crates. During processing, we use a double selection: once a cluster selection, then we sort the grapes, only completely healthy grapes go into the fermenter, we use a 21-day fermentation on the skins, in the meantime we gently macerate the mash, then 2 years of aging in oak barrels follows, when the wines become nice and smooth.
