Description
classic, not sugar-based, but harmony-based aszu. Like a "prima ballerina assoluta" at the top of her career: elegant, refined, light and deep. The anatomy of this high content wine is balanced by nice acids, the first notes of the complex richness of its taste are revealed by the citrusy, spicy aroma. In terms of aftertaste, only its aging potential is longer. Wine and food pairing: rum baby, especially if it is not sprinkled with rum sugar syrup, but like the original baby, with Tokaji aszu it makes an excellent pair with parmesan and aged comté, from blue cheeses maybe a medium-bodied bleu d'Auvergne or a Spanish La Peral would also go well with it, vacherin Mont d'Or goose/duck fattened liver freshly pan-fried veal brisket, fried in butter, drizzled with a little lemon juice (or served with half a fried lemon) langoustine just steamed, with a lemon-aszu butter sauce (yikes!) Bottled quantity: 471 bottles (alcohol: 11% vol, residual sugar: 176 g/l, acid: 9.89 g/l)
