Description
Crémant was born from the use of chardonnay grown on the plots of Grenelle Ház near Montreuil-Bellay. The soil of the area is typically limestone with a high content of flint, on which the average 25-year-old vines produce fruit with a truly remarkable aroma. Hand-harvesting is followed by pneumatic pressing, then fermentation is carried out under temperature-controlled conditions at 15°C, with the addition of yeast. Aging takes place in oak barrels of 60 hl, without sulphur, under lees, at which time the malolactic fermentation also takes place. Its llata shows a wide range of aromas, and the sip is creamy and dense, full of almonds, fresh coffee and caramel.
