Description
The chenin blanc and chardonnay grown on the clayey glauconite and chalky soil of the winery's area, located next to Le Puy Notre Dame and Les Caves, were mechanically harvested from vines that were 25 years old on average. After sorting, pneumatic pressing followed, and then it was fermented at 15°C with the addition of yeast. During maturation, the wine is kept on a rack until two weeks before bottling, at which time it has a natural sugar content of 21 g/l. After blending (chenin blanc 90%, chardonnay 10%), it was bottled on 04/05/2017 and aged for more than 2 years. Its color is a charming straw yellow, its aroma is extremely complex, the aromas of caramelized peaches, almonds and acacia honey form a fantastic mixture. The aromas of caramel and brioche appear in the sip, and the finish is completed by the almonds already in the aroma.
