Description
It was first produced on the occasion of the 150th anniversary of the foundation of the winery, in a very limited quantity, with only 1,133 bottles, but it was such a success that it has been produced continuously ever since. The grapes for the champagne, made from a blend of Grolleau noir (70%) and Grolleau gris (30%), come from several areas. Next to the Layon River lies Cléré (shale soil) and Neuil (shale and sandy-gravel soil), and a little further from the river the area of Bouille Loretz (marly glauconite soil) and Martigne-Briand (shale and sandy-gravel soil), from which manual the grapes arrive for processing after harvest. After pneumatic pressing, it was fermented at 15°C using yeast, then after maturation it was bottled with 17 g/l of natural residual sugar and rested in the depths of the cellars for several months. Its color is pale peach, its aroma is full of floral and fruity aromas. The sip is creamy and elegant, rich in citrus notes.
